Recipe Review: Snickerdoodles

I have this cooking dream.

In the dream, I am no longer continuously experimenting with Internet recipes (or magazine recipes or even cookbook recipes). I am not scrutinizing photos and trying to decide if food.com or a Mormon stranger's mommy blog seems like a more legit gamble. I am no longer crossing my fingers and hoping I don't embarrass myself serving the "never made this before" version of whatever I am serving, because I have a tried and true recipe that is DELICIOUS and I would not think of altering it.

In the cooking dream, I do not always bring watermelon to the potluck.

Friends, I have come one step closer to the dream. Meet snickerdoodles. Heirloom snickerdoodles if you will.

Best ever. Stop making other snickerdoodle recipes. Save this recipe. Make it every Christmas.

Are snickerdoodles a seasonal cookie? I never liked them because they're always puffy and dry. And let's be real, there's not even any chocolate.

THESE snickerdoodles though are thin and chewy and melt in your mouth. The recipe is from Our Best Bites and is going into my recipe box on an actual I'm-keeping-this recipe card.

Ingredients
1 3/4 cups sugar, divided
1 T cinnamon
2 1/2 cups flour
2 tsp cream of tartar
1 tsp baking soda

8 T butter (not margarine) at room temperature
1/2 cup vegetable shortening
2 eggs


Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.  Mix 1/4 cup sugar and cinnamon in a shallow bowl and save for later.  Combine flour, cream of tartar, and baking soda in a bowl. If you are using unsalted butter, add 1/2 tsp salt.


Instructions
Using your stand mixer, beat butter, shortening, and remaining 1 1/2 cups sugar together on medium speed until light and fluffy, 3-6 minutes.  Beat in eggs about 30 seconds.
On low speed, slowly add flour mixture until combined, about 30 seconds.
Roll into 2-tablespoon dough balls and roll in cinnamon sugar mixture. Space 2 inches apart on prepared baking sheet 2 inches apart. They flatten as they cook.
Bake 10-12 minutes, until edges are set and just BARELY beginning to brown, but centers are still soft and puffy. The cookies should look raw between the cracks and seem underdone. If you overcook these, they will become dry and crispy. Fail.
Cool on baking sheet for 10 minutes, then transfer to a wire rack and let cool to room temperature.  Makes about 2 dozen 3-4 inch cookies.

My First 5k


Do I look sweaty and happy? Because I am! We both ran the Run for Justin this morning. Justin's sister is a friend from church. I was a little nervous because I was pretty slacko on the training and was only up to 2 miles (5k is 3.1 miles), and have been having some knee issues. Not technically my knee, but the head of my fibula if that means anything to you.

Anyway, no knee pain this morning, and I ran (almost) the whole way and my time was around 30, which were the 2 things I was hoping for. I liked the beginning because you could hear everyone's feet running, and I liked the end because it was a steep hill down to the finish line. Steep as in, sprint or ruin yourself. Jon and I didn't run together (obviously) but he came back and ran the last 0.2 with me, all athletic-like and wanting to talk. He possibly has an extra lung.

How was run a 5k not on my bucket list? I'm adding it just so I can cross it off.

In October there is a 5k for Susan G Komen that I'd like to run -- with you guys! So plan your trips!

No. 6


6. Take a Photography Class

This is perhaps the least satisfying thing I have ever accomplished off the catch-all list. Monday nights here I spent at photography class. It wasn't what I expected, and it was a hard class to go to. Frustrating things about this class included:


a. Constant, predictable hunger during class
b. My computer crashed halfway through the semester and I lost all my work from the first half. (Not permanently; they're stuck on the hard-drive right now)
c. I tried to drop it and take Pilates instead. Denied by higher powers.
d. My replacement computer got "held for clearance (i.e. $$) in customs and took a month longer getting here than planned, so I had nowhere to edit my pictures
e. One memory card mysteriously deleted itself
f. Extreme navigation and timing skills required to print pictures at appropriate times
g. Accumulating fees

Beyond that, I did learn my way around the menus of my camera as well as some very basic photoshop methods. And this weekend my teacher is taking us rock climbing by Palm Beach! Above is my favorite picture from my portfolio, for which I did not even use the auto setting!

No. 5

5. Drink and un-frozen Mr. Freeze

It's gone from the list! I did it :)
Actually it was several weeks ago, and I have to say -- it wasn't that good. It didn't even provoke a picture.

Other than that, my summer is half over! I fly from Omaha to Los Angeles to Sydney on July 15. July 16 never happens because I cross the international dateline. I am avoiding imagining myself contained on a plane for that many hours ... 14 from LA to Sydney. Besides the sitting for so long part, I am getting PRETTY Excited for this semester! (Special thanks to VISA, who will let me spend all the money I do not have in countries all around the world.) I found out I'll be living with a mom and her daughters who are 22 and 24 as well as 2 other girls from the US who will be students at the Wesley Institute with me. Kindof like living at home since I'll have a mom and 2 sisters, and kindof like living at Dordt since I'll be with 4 other girls my age (ish). Just missing a Dad and one more roommate. Also all the boyfriends attached to roommates...

Pray that I don't miss my real family and other people I love too much.
