BBQ chicken with Mango Salsa
Last night we had some friends over for a barbeque to celebrate the graduation of a roommate who finished her Master's degree a few weeks ago. It was also the christening of our deck, and the only day of the week without rain.
We wanted to grill, and I thought this would be the perfect time to try out BBQ chicken with mango salsa, a recipe from Lauren at healthy-delicious.com that I've been saving on pinterest and daydreaming about during class. (We were learning about therapy for amputees this week, and it was just not my thing.) Most of the ingredients were things we don't normally eat, and I was pretty sure Jon wouldn't want to try it. I wasn't sure that I would like it either, so testing it out on a group of unsuspecting people seemed a safe way to avoid leftovers that would go bad in the fridge while we each waited for the other person to eat them.
Here's the recipe, which I recommend doubling even if there are only 2 of you. It is that good:
Mango Salsa
1 mango, cubed
2 T red onion, chopped (mine actually looked purple)
1 jalapeno pepper, minced
1/4 c. fresh cilantro, chopped
Juice from 1 lime (about 2 T)
Just mix everything together! I wasn't sure how to cut a mango (they have a weird pit) so I googled it.

And then I had to add the jalapeno. We had a staredown. It was small and powerful, but I had the knife ... I wasn't sure exactly how to cut it either, but I took out the seeds with a spoon and squinted my eyes to avoid fire-eyeball.

It turned out delicious! Besides eating it on our BBQ chicken, we scraped out the extras with some tortilla chips. I bought another mango today for a possible round 2.

Looks tasty. I think I'm allergic to mangoes though, slightly. We put one in a smoothie once and I felt really sick. They're in the poison ivy family.
